If you’d have asked me 5 years ago what my favourite sweet treats were I’d have said brownies, Victoria sponge cake and flapjacks…


Now, don’t get me wrong these classic bakes are still some of the hardest for me to resist but banana bread and carrot cake now rival it out to be my top favourite! Words cannot describe what exactly it is about these two that make them so delicious, but I think the texture, flavours, sweetness and feeling after eating a slice combined, work so beautifully well together that it makes me hungry even thinking about it.


Today I am going to share with you a healthy banana bread recipe that is full of fruit and crunch – a little bit different to the classic ones you’ve probably tried before. This banana bread has blueberries and pumpkin seeds throughout which mean that it is ideal for a morning breakfast with yoghurt and fruit or for an afternoon treat with a cuppa! It is an easy, and adaptable recipe that will never leave you feeling guilty. No butter or sugar, instead yoghurt, bananas and apple sauce!







2 very ripe bananas
150g apple sauce
3 medium eggs
1 tsp. vanilla extract
1 tbsp. fat free Greek yoghurt
90g self-raising flour
160g plain flour
1 tsp. bicarbonate of soda
½ tsp. baking powder
Pinch of salt
1/2 tsp. cinnamon
85g blueberries
2 tbsp. pumpkin seeds



– Pre-heat the oven to 180°C fan.

– Prepare a loaf tin with a liner, or use a non-stick loaf pan.

– In a large bowl mix the flours, bicarb. soda, baking powder, salt and cinnamon in a bowl and leave to one side.

– In a small bowl mash the bananas with a fork until smooth.

– In a separate bowl, mix together the eggs, apple sauce, vanilla extract and Greek yoghurt until combined – then add the banana and mix.

– Add the blueberries and pumpkin seeds.

– Pour the wet ingredients into the dry and stir until fully combined.

– Pour the mixture into the loaf pan and bake for 20-25 minutes until golden brown on top. Remove from oven and cover with foil and then bake for a further 20-25 minutes until cooked through (a skewer should come out clean).

– Leave on a rack until cool.
