Everyone has those days when you simply crave those things that you usually try to avoid. That is not to say that those things should be banished from your diet altogether, but that eating chocolate, cakes and baked goodies are not the best things to consume on a daily basis.


I tend to find that if I have had a really positive week or two of being super healthy – eating clean and hitting the gym – then A) I do start to crave those ‘not-so-good-for-you’ things and B) I actually want to reward and enjoy myself by allowing occasional treats. But for me, that does not mean hitting the shops and filling my basket with multiple sharing bags of chocolate or freshly baked doughnuts and cookies. Overindulging myself, just because I have been ‘good’ for a week or so, actually makes me feel bloated and groggy!

So, when I can turn yummy snacks into a healthier alternative, I am able to satisfy my cravings completely guilt-free!



Flapjacks are one of my all time favourites. Yet misleadingly, they are often thought to be ‘better for you’ than brownies or millionaire shortbreads when you are out and about. However, in reality they are often packed with extremely high sugar content, saturated fats and way more calories than you think. So, I wanted to find a way to modify the traditional golden syrup, butter and sugar-laden recipe to bring you a snack that you can enjoy with the benefit of not feeling unhealthy!


I bring you DAIRY, GLUTEN and SUGAR-FREE flapjacks.

This magical creation turned out way better than expected and is easily adaptable so that you can tailor the recipe to your own desires, whether it’s packing them with seeds, shredded coconut, dried fruits, or dark chocolate drops – add as much or as little as you want!



Makes 12-14

150g coconut oil
200g honey
160g of rolled oats
1 tsp. cinnamon
50 g pumpkin seeds
2 tbsp. black sesame seeds
2 tbsp. chai seeds
2 tbsp. white sesame seeds
50 g raisins
50 g dried cranberries


– Set the oven to 180°C and prepare a square 8×8” baking dish with greaseproof/baking paper.

– In a bowl combine the dry ingredients: rolled oats, cinnamon, seeds and dried fruit. Set aside.

– Melt the coconut oil and honey in a pan over a medium heat until it starts to boil.

– Add the dry ingredients to your pan and stir until all mixture is fully combined.

– Pour and evenly spread the mixture into your prepared baking dish and press down so that the flapjacks are quite compact.

– Bake in the oven for 20 minutes, or until the top is golden brown.

– Once out of the oven, leave in the dish to completely cool, before cutting into pieces

(Note: if you do not let it cool, the mixture starts to crumble and your flapjack turns into granola!)
