BBQ season is nearly upon us and I couldn’t be happier. Nothing quite beats a warm summer evening, a jug of Pimms, excessive amounts of food and of course a ‘raw broccoli & sunflower seed salad’! Now I can already hear you thinking… ew RAW broccoli? Really? Hold your judgement my friends…

My first raw broccoli salad was a couple of years ago back home in Yorkshire. My mum told me about it and I was skeptical. I mean, I’m pretty sure I laughed at the suggestion of making it. She said the same thing, hold your judgement…

I helped prepare the recipe she’d received from a friend (after, she too had questioned how nice a raw broccoli salad could really be) and noticed that the dressing was up there with ‘most-unhealthy-dressings-for-salads-that-I’ve-ever-laid-eyes-on’. It was essentially mayonnaise and sugar. Anyway, for a special Saturday night BBQ I didn’t say anything. Needless to say it was delicious and I’ve had multiple times since!

It made me wonder if raw broccoli could ever be nice without smothering in mayonnaise as it kind of defeats the point of having a ‘salad’ if its going to be worse for you than carbs or pudding…

If I’m completely honest, since being in London and not having any outdoor space, I had forgotten about this salad as we don’t have BBQs! However, the beauty of Instagram stories meant that I was reunited with it a couple of weeks ago when one of my best friends shared a snap of her family BBQ with a familiar looking side dish on their kitchen table.

Adding the dressing

I asked her to ping me over the recipe and to my absolute JOY this one didn’t contain mayo and sugar. Yes, it has a dressing, but this felt a little lighter! I gave it a go, wondering if it could match the recipe I’d had before and I was not disappointed. I altered some of the ingredient amounts around to allow for a lack of ‘cup’ measurements and it really was YUM.

Raw Broccoli & Sunflower Seed Salad
A simple, yet impressive side dish to add colour to any table. This raw broccoli salad is a surprising favourite and perfect to accompany a BBQ!

Instructions
  1. Toast the sunflower seeds lightly over a medium heat for about 3-5 minutes. Stirring frequently to prevent burning. Set aside in a large bowl.
  2. Add the chopped broccoli, onion, cheese and cranberries and give everything a good mix.
  3. In a separate jug or small bowl, combine all the dressing ingredients. Whisk until well blended.
  4. Pour the dressing over the salad and stir until all of the broccoli is coated in dressing. Leave the salad for at least 30 minutes to marinate.
  5. Put the salad in a serving bowl and enjoy!
