I love pastry – I mean who doesn’t? It can be puff, shortcrust or filo, I won’t be picky, but there’s nothing better than a freshly baked almond croissant, a spinach and feta quiche (G’s mum does the BEST) or a curried root vegetable pie (see recipe here, it’s delish!!) In fact, pastry makes me feel ‘homey’ and indulgent. That’s why, when I saw Waitrose’s recipe for Roasted Vegetable, Lentil & Feta Filo Pie, I just had to give it a go. You can’t really go wrong with combining filo pastry with feta and veg!

This recipe, is one that everyone will enjoy despite it being vegetarian – satisfying, hearty and very filling. The cheese is the cherry on top, whilst the dish itself takes little effort or time to prepare – it’s a no brainer.

I amended some of the ingredients in the dish and you can definitely add freshly roasted veg if you have the time. But the beauty of this meal is that it’s simple, quick and family friendly.

Next time you’re in Waitrose, have a look at their recipe cards that are at the ends of the aisles. Roasted Veg, Lentil & Feta Filo Pie

  1. Preheat the oven to 200 degrees fan. Add the frozen vegetables to a large frying pan and cook on medium heat for about 10 minutes, until soft.
  2. Add the garlic and cook for 1 minutes, then add the ras el hanout and cooked for a further minute.
  3. Stir in 2 tsp. honey, lentils, chopped tomatoes and half a can of water – simmer for 5 minutes. Spoon into a 20x30cm baking dish then scatter with the crumbled feta.
  4. Brush the filo pastry with a little oil and then layer on top of the pie. Score into diamonds using a sharp knife and bake for 15 minutes or until crisp and golden on top.
  5. Serve with a green salad or vegetables of your choice. Enjoy!
